Creamy Hot Chicken Salad Oven Recipe
Ingredients needed:
* 3/4 cup of coarsely crushed potato chips
* 1/2 cup of chopped pecans
* 6 cups of chopped cooked chicken
* 2 cups of shredded cheddar cheese
* 2 cups of chopped celery (4 stalks)
* 1 cup of chopped red and/or yellow sweet pepper
* 1/4 cup of sliced green onions
* 1 can of cream of chicken soup
* 1 cup of mayonnaise
* 1 8-ounce carton of sour cream
* 1 teaspoon of dried thyme or basil, crushed
* 1/4 teaspoon ground black pepper
* Sourdough bread slices, toasted (optional)
* Coarsely crushed potato chips (optional)
* 1 recipe for Caramelized Red Onion (optional) (See below)
Preparation steps:
* Preheat oven to 400 degrees. In a small bowl, combine the 3/4 cup crushed potato chips and the pecans; set aside.
* In a large bowl, stir together chicken, cheese, celery, sweet pepper, and green onions. In a medium bowl, combine soup, mayonnaise, sour cream, thyme, and black pepper. Pour soup mixture over chicken mixture; fold gently to combine. Transfer mixture to an ungreased 3-quart rectangular baking dish. Sprinkle with potato chip mixture.
* Bake, uncovered, for 25 to 30 minutes or until heated through and bubbly around the edges. If desired, serve on toasted bread and top with additional crushed chips and/or Caramelized Red Onion.

Mediterranean Sausage and Grapes Oven Recipe
Ingredients needed:
* 1 1/2 pounds whole seedless red grapes
* 1 16-ounce tube refrigerated cooked polenta, cut into 1/2-inch pieces
* 1 small red onion, cut into thin wedges
* 1 teaspoon snipped fresh rosemary
* 1 to 2 tablespoons of olive oil
* 6 uncooked sweet and/or spicy Italian sausage links (about 1 1/2 pounds)
* 1 to 2 tablespoons balsamic vinegar
Preparation steps:
* Preheat oven to 350 degrees. In an ungreased 3-quart rectangular baking dish combine grapes, polenta, onion, and rosemary. Drizzle with oil; toss gently to coat.
* Using a fork, prick each sausage link in several places. Add sausages to baking dish, pressing lightly into grape mixture.
* Bake, uncovered, for 50 to 60 minutes or until sausages are cooked through and grapes are slightly shriveled. Drizzle with vinegar; toss gently to coat.

Ingredients needed:
* 4 medium Granny Smith apples
* 2 medium Granny Smith apples
* 2 medium Cortland apples
* 2 medium Mcintosh apples
* 1 large lemon
* 1/2 cup of sugar
* 1/3 cup of all-purpose flour
* 8 cinnamon sugar coated apple cider doughnuts
* 5 tablespoons of butter, melted
Preparation steps:
* Preheat oven to 375 degrees. Peel, core and cut apples into wedges; halve wedges crosswise so the pieces are smaller than 2 inches. Place apples in a large bowl. Juice the lemon, retaining as much pulp as possible. Add lemon juice and pulp to apples; toss gently to coat. Sprinkle with sugar and flour; toss gently to combine. Transfer mixture to a 3 quart rectangular baking dish.
* Arrange doughnuts on top of apple mixture; drizzle with melted butter. Bake about 45 minutes or until filling is bubbly. If necessary to prevent overbrowning, cover loosely with foil for the last 15 minutes of baking. Serve warm.

* 1 loaf (1 pound) frozen bread dough, thawed
* 2 tablespoons olive oil, divided
* 1 cup (4 ounces) shredded part-skim mozzarella cheese
* 1 envelope (1 ounce) ranch salad dressing mix
Preparation steps:
* In a large skillet, cook bacon over medium heat for 5 minutes or until partially cooked; drain on paper towels. Roll out dough to 1/2-in. thickness; brush with 1 tablespoon of oil. Cut into 1-in. pieces; place in a large bowl. Add the bacon, cheese, dressing mix and remaining oil; toss to coat.
* Arrange pieces in a 9-in. x 5-in. oval on a greased baking sheet, layering as needed. Cover and let rise in a warm place for 30 minutes or until doubled.
* Bake at 350° for 15 minutes. Cover with foil; bake 5-10 minutes longer or until golden brown.

* 1/2 cup shredded cheddar cheese
Preparation steps:
* Preheat oven to 350°F. Mix Gravy Mix, ground beef, minced onion and pepper in large bowl. Shape into a loaf, 2 inches high, in shallow baking pan.
* Stir chives into prepared mashed potatoes. Spread over meat loaf.
* Bake 55 minutes or until cooked through. Sprinkle with cheese. Bake 2 minutes longer or until cheese melts.

LOUISIANA HOT CRAB DIP
Ingredients:
1/2 pound jumbo lump crabmeat, free of shells
1 (8 ounce) package cream cheese
1/2 cup mayonnaise
1/4 cup grated Parmesan
3 tablespoons minced green onions (white and green parts)
2 large garlic cloves, minced
2 teaspoons Worcestershire sauce
2 tablespoons fresh lemon juice
1 teaspoon hot sauce
1/2 teaspoon Old Bay seasoning
Salt and pepper to taste
Directions:
* Preheat oven to 325 degrees F.
* Combine all of the ingredients in a casserole dish and gently stir until thoroughly mixed. Adjust seasoning to taste. Bake for 35 to 40 minutes until lightly golden on top. Serve hot.
