Sweet Potatoes with Pecans and Blue Cheese Oven Recipe
Ingredients needed:
* 2 large sweet potatoes, peeled and cut lengthwise into thin wedges
* 1 small sweet onion, cut into 1-inch pieces
* 4 tablespoons of olive oil
* 1 teaspoon of salt
* 1/2 teaspoon of ground black pepper
* 1 tablespoon of butter
* 1/3 cup of broken pecans
* 1 tablespoon of packed light brown sugar
* 4 teaspoons of cider vinegar
* 1 1/2 teaspoons of honey
* 1 clove of garlic, minced
* 2 tablespoons of crumbled blue cheese
Preparation steps:
* Preheat oven to 375 degrees. In a 15-inch by 10-inch baking dish, combine sweet potatoes and onion. Drizzle with 2 tablespoons of the oil; sprinkle with 1/2 teaspoon of the salt and 1/4 teaspoon of the pepper. Toss gently to combine. Spread mixture in single layer. Bake for 30 to 35 minutes or until vegetables are tender; stirring once.
* Meanwhile, in a small skillet, melt butter over medium heat. Stir in pecans, brown sugar, and 1/4 teaspoon of the salt. Cook and stir for 3 minutes or until pecans are coated in the brown sugar mixture. Spread pecans on a sheet of foil; cool completely.
* For dressing, in a small bowl, whisk together vinegar, honey, garlic, the remaining 1/4 teaspoon of salt, and the remaining 1/4 teaspoon of pepper. Slowly whisk in the remaining 2 tablespoons oil until combined. Whisk in 1 tablespoon of the cheese.
* To serve, transfer sweet potatoes and onion to a serving platter. Drizzle with dressing. Sprinkle with pecans and the remaining 1 tablespoon of cheese.
