Vegetable and Bean Tostadas Oven Recipe



Ingredients needed:

* 8 (6-inch) corn tortillas
* 1/4 cup of vegetable oil
* 1 bag of coleslaw mix
* 1 tablespoon of finely chopped jarred jalapenos plus 1 tablespoon of brine
* Salt and pepper
* 1 onion, halved and sliced thin
* 2 small green bell peppers, stemmed, seeded, and sliced thin
* 2 garlic cloves, minced
* 3 tablespoons of lime juice
* 1 can of refried beans
* 4 ounces of feta cheese, crumbled (1 cup)
* 1/2 cup of sour cream
* 2 tablespoons of minced fresh cilantro

Preparation steps:

* Preheat oven to 450 degrees.
* Brush tortillas all over with 3 tablespoons of oil and arrange in single layer on 2 baking sheets.
* Bake until lightly brown and crisp, switching and rotating sheets halfway through baking (approximately 11 to 12 minutes)
* Toss coleslaw mix with jalapenos and brine and season with salt and pepper to taste. Set aside.
* Heat remaining 1 tablespoon oil in 12 inch skillet over medium heat. Add onion and bell peppers and cook until softened and lightly browned. Stir. in garlic and cook for about 30 seconds. Add 1 tablespoon of lime juice and season with salt and pepper to taste. Transfer to bowl. Cover to keep warm.
* Microwave refried beans, covered, until hot (approximately 1 to 2 minutes).
* Spread warm beans evenly over tortillas, then top with feta cheese, onion-pepper mixture, and slaw. Whisk sour cream and remaining 2 tablespoons of lime juice together, then drizzle over top. Sprinkle with cilantro and serve.
