Mexican Meat Loaf Pie Oven Recipe



Ingredients needed:

* 2 eggs, lightly beaten
* 1 cup of finely crushed tortilla chips
* 3/4 cup of taco sauce
* 1 envelope of onion soup mix
* 1/2 teaspoon of ground black pepper
* 1 1/4 pounds of ground beef
* 1 pouch of cooked Spanish-style rice, such as Uncle Ben's Ready Rice (approximately 8 ounces)
* 1 can of golden hominy, rinsed and drained
* 1 can of diced tomatoes and green chilies, drained
* 1 cup of shredded Monterey Jack cheese with jalapeno peppers
* 1 medium fresh Anaheim chile pepper, seeded and chopped
* 1/4 cup of snipped fresh cilantro

Preparation steps:

* Preheat oven to 350 degrees.
* In a large bowl, combine one of the eggs, the 1 cup chips, 1/2 cup of the taco sauce, the soup mix, and black pepper. Add ground beef; mix well. Press mixture onto the bottom and up the sides of a 10-inch deep-dish pie plate.
* Heat rice according to package directions. In another large bowl, combine the remaining egg, the remaining 1/4 cup of taco sauce, the rice, hominy, tomatoes and chiles, cheese, Anaheim pepper, and snipped cilantro. Spoon mixture onto meat in pie plate. Place on a baking sheet; cover loosely with foil.
* Bake for 40 minutes. Remove foil. Bake for 20 minutes longer. Cool on a wire rack for approximately 15 minutes. Top with additional chips, jalapeno peppers, and/or cilantro sprigs.
* Serve and enjoy.
