Squash and Sausage Oven Recipe
Ingredients needed:
* 2 pounds of yellow squash, cut into bite-size pieces
* 1/4 cup of chopped onion
* 1 pound of Italian sausage
* 1/2 cup of fine cracker crumbs
* 2 eggs, beaten
* 1/2 cup of grated parmesan cheese, divided
* 1/4 teaspoon of thyme
* 1/4 teaspoon of rosemary
* 1/4 teaspoon of garlic powder
* Salt and Pepper to taste
Preparation steps:
* Preheat oven to 350 degrees
* Cook squash in boiling, salted water until tender; drain. In skillet, brown onion and sausage; drain.
* Add squash and remaining ingredients, except 2 tablespoons parmesan cheese; mixing well.
* Divide mixture between 2 8-inch pie plates. Sprinkle with remaining parmesan cheese. Bake for 45 minutes, or until brown.
