Pepper Jack Chicken Pasta Oven Recipe



Ingredients needed:

* 3 cups uncooked mostaccioli
* 1/4 cup of chopped onion
* 1/4 cup of chopped sweet red pepper
* 1 tablespoon of canola oil
* 1/2 teaspoon of minced garlic
* 1 can of nacho cheese soup
* 1 package of ready-to-use Southwestern chicken strips
* 3/4 cup of water
* 1 can of black beans, rinsed and drained
* 1/4 cup of shredded Monterey Jack Cheese, optional

Preparation steps:

* Cook mostaccioli according to package directions. Meanwhile, in a large skillet, sauté onion and red pepper in oil until tender. Add garlic, cook 1 minute longer. Stir in the soup, chicken and water. Bring to a boil. Reduce heat; cover and simmer for 10 minutes longer.

* Stir in beans; heat through. Drain mostaccioli; transfer to a serving bowl; top with chicken mixture. Sprinkle with cheese if you wish.
